Vegetarian Recipe – Spinach & Ricotta Stuffed Shells by What Shall I Cook
Ingredients:
• 16 jumbo pasta shells
• 1 tbsp olive oil
• 2 cloves garlic, minced
• 4 cups fresh spinach, chopped
• 12 oz ricotta cheese
• 1 cup shredded mozzarella
• ½ cup grated Parmesan
• 1 egg
• 1 tsp dried basil
• Salt & pepper to taste
• 1½ cups marinara sauce
• Fresh basil for garnish (optional)
🍽️ Instructions:
1. Preheat oven to 375°F (190°C).
2. Cook pasta shells until al dente, then drain and set aside.
3. In a skillet, sauté garlic in olive oil, then add spinach and cook until wilted. Let cool slightly.
4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, basil, and the cooked spinach. Season with salt and pepper.
5. Spread half the marinara in a baking dish. Stuff each shell with the ricotta-spinach mixture and place in the dish.
6. Top with remaining sauce and a sprinkle of extra cheese if desired.
7. Cover with foil and bake for 25 minutes. Uncover and bake 10 more minutes until bubbly and golden.
8. Garnish with fresh basil and serve warm.
This dish is hearty, satisfying, and a great way to sneak in some greens.
