First attempt at baklava came out pretty good. Used crushed pretzels instead of nuts because my dad can’t eat them. Also a test drive for a party that’s going to have someone with a nut allergy.

    I love ingenuity when it comes to modifying recipes! Did the pretzels work out well as a nut substitute? I’m curious if they mimicked the taste and texture of nuts, or if they softened too much from the liquid ingredients.

    I’ve always wanted to try baklava but I’m allergic to nuts as well and it’s hard to find a nut free alternative that’s still somewhat authentic

    if the people can have seeds, I’ve heard that sunflower or pumpkin seeds can be good substitutes for nuts in some recipes.

    I have also successfully used crushed potato sticks as a substitute for nuts or for chow mein noodles or sesame sticks, as they are gluten-free.

    Roasted pumpkin seeds/pepitas are a great substitute for dishes that call for nuts.

    trying to think of ways to stop the pretzels from getting too soft texturally… could you perhaps candy the bits to keep them crunchy? though maybe that’d make the overall recipe too sweet without adjusting 🤔 still, what a clever idea!

    If the pretzels do become soggy, can you use sunflower seeds or pumpkin seeds or sesame seeds? They would all have a similar crunch to nuts. Even pine nuts are not considered nuts. They are the seed from a pine tree. They just happened to have the word nut in their name.

    Did you roll out all the layers or find a place to buy them? I love baklava but rolling out all those thin sheets is above my skill level.

    How interesting! I love this idea, could be a fun portal to unique flavor combinations. I’d maybe try toasting the crushed pretzels before adding them in, to make them very hard and reduce the softening from soaking up the liquid.

    What a great idea! As a parent of a kiddo with a nut allergy, I really appreciate stuff like this. Just a friendly reminder to make sure that the pretzels you’re using are also peanut safe…. I’ve frequently been surprised at certain products that are not safe due to being processed in the same facility as peanuts or treatments. But you might already know this. Either way, looks delicious!!

    I love baklava, but I’m allergic to walnuts. I can have the baklava that has all pistachios, and I’ve even made baklava at home with pecans. But after researching from reading your post, I feel like I have to try to make baklava with sesame seeds or pine nuts. Maybe I’ll try making half with sesame seeds and half with pretzels.

    I wonder how dried chickpeas would work? I’ve had pretzel crust on a cake and it’s really good but gets soggy after a day.
