    Wipe off with white vinegar, cut it out if you feel like you have to. Prosciutto is salt and most likely Prague powder #2, Prague powder #2 is a mixture of 6.25% sodium nitrite, 4% sodium nitrate, and 89.75% salt. It will not all be bad even if it’s bad.

    No… the hell… hasn’t anyone here seen what hamon or prosciutto looks like before it’s sliced?

    Generally, prosciutto doesn’t go bad because it is salt/smoke/dry cured meat. That’s why it can sit on the counter for a month or two while you slowly slice away pieces…

    The ham has the same bacteria as cheese to protect it on the outside, creating sort of a rind.

    What you see there are bits of rind, cut it off or eat it…
