It was a lot of effort for 1 rack. I'll need to do two next time. This is a picture before the 2 hour wrap, grill at 250 degrees.

    A really nice BLACK bark formed on these when I unwrapped them. I used Bone Suckin Seasoning as the rub and I used a lot. The main ingredient is brown sugar. 

    I posted these same ribs after the bark formed and everyone was saying they were burnt. I argued they were not, and it turned into a real old time online bullying session.
