My last attempt at 137 ended with a well done steak that I was too ashamed to take a photo of 😆

Played it by the book this time:
– 137 for 2 hours
– Ice bath for 2 mins
– Seared on cast iron as hot as I could get it with avocado oil 1 min per side.

Probably the best steak I've ever made.

  2. Looks good. What was the difference, the ice bath? I find that 137 is consistently great but I have to make sure to let the steak cool down first or I end up overcooking during the sear
