I swapped out zucchini for red peppers and added a side salad with apples and lemon vinaigrette and made a pan sauce with tallow, Dijon, chicken base, sour cream and dill. It's 10/10 and the polenta was straight fire as the kids say. I'm doing closer to 1600 calories now for reasons but without the pan sauce and salad it's a really low calorie dinner option. I'd never had polenta before but it tasted like delicious cheesy grits and was amazing.
