Cooked fully on cast iron with a quick pan sauce. A few degrees past what I wanted but the flavor was great. Not super tender but great value for the price of this cut.

    Badass cut. Look for it labeled as coulet steak or roast as well. Same exact cut basically

    Looks great, though it looks like you might not seared the fat cap which I would do in the future 🙂
