Weaving together Latin American and European cuisine, two executive chefs have created a menu that celebrates a rich and unique cultural history.

Peruvian-born chef Alejandro Saravia reopened Morena last year, after the original’s closure back in 2013. Named after a term sometimes used to describe brunette women in Latin America, Morena reflects his passion for the region’s cuisine. The menu draws not just on Saravia’s heritage but his team’s too – with influences from Venezuela, Colombia, Chile and Argentina.

In an exclusive event for Broadsheet’s inaugural Dine Out festival, Saravia is teaming up with Andreas Papadakis, co-owner and executive chef at Melbourne’s Tipo 00 , to explore the culinary connection between Italy and Argentina, with its large Italian diaspora.

Kicking off the night are snacks like eggplant escabeche on chickpea crackers with kombu-tomato reduction, and brioche topped with WA scallop, hazelnut and truffle. For entrées, expect preserved winter wild mushroom sorrentino (Argetinian ravioli) in pumpkin locro (hominy, aka nixtamalized corn, sauce); beef tartare with rhubarb and porcini; and snapper crudo with quince and sea urchin. There’s also an optional add-on of rainbow trout crudo with tomato and Yarra Valley caviar.

Mains will include veal Milanesa with chimichurri gremolata, and spaghetti with Moreton Bay bug, tomato butter and lovage. Sides like pepperonata and polenta with smoked tomato tuco jus round out the spread. To finish, a chocolate alfajor with dulce de leche semifreddo and fermented berries, followed by Papadakis’s signature “Tipomisu”.
