GREEK TURKEY MEATBALLS w/ ORZO SALAD ✨ meal prep friendly, high in protein, and so delish. I’ve made this one twice this week!
Ingredients:
GREEK TURKEY MEATBALLS –
1 lb lean ground turkey (see notes)
1 tbsp olive oil (15 g)
1 large egg
1/4 cup plain bread crumbs (28 g)
1/4 cup red onion (40 g) finely minced
3 cloves garlic minced
2 tbsp parsley, chopped
1 tbsp dill, chopped
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
ORZO SALAD –
3/4 cup orzo (140 g) dry
3/4 cup cherry tomatoes (111 g) quartered
3/4 cup cucumber (100 g) finely diced
1/4 cup red onion (40 g) finely diced
1/4 cup crumbled feta (28 g)
2 tbsp lemon juice (30 g)
1 tsp dijon mustard (5 g)
1/2 tbsp honey (10 g)
1/2 tsp garlic powder
salt and pepper, to taste
2 tbsp olive oil (30 g)
Instructions:
1. Preheat oven to 400 F and line a half baking sheet with parchment.
2. In a mixing bowl, mix together all turkey meatball ingredients and stir until just combined. Use a cookie scoop or spoon to form into 20 equal meatballs (~1.5 tbsp each). Bake 15 min, until golden brown and juices run clear (165F internal temp).
3. Meanwhile, cook the orzo according to box instructions. Drain and rinse with cold water.
4. For the lemon vinaigrette, whisk together lemon juice, dijon, honey, garlic powder, salt and pepper. Slowly drizzle in olive oil while constantly whisking to emulsify.
5. Mix cooked orzo, tomatoes, cucumber, red onion, feta and lemon vinaigrette. For meal prep, separate orzo salad equally into 4 containers with 5 meatballs each. Enjoy with fresh lemon and tzatziki!
Notes:
• I prefer 99/1 lean turkey for the most protein, but this can be too dry for some. I’d recommend using 93/7 if you like a juicier meatball.

if you’re craving a fresh flavorful dish that’s meal prep friendly you need to make these Greek turkey meatballs with orzo salad each serving is packed with 37 g of protein and so much flavor i love a good Mediterranean inspired lunch or dinner and I cannot get enough of this one i made it twice this last week alone and I have all the ingredients on my grocery list so I can make it again one of the best parts about it is how quick and efficient it is while the meatballs are baking I can boil my pasta chop up all my veggies and make the dressing for the orzo salad this salad is so delicious you guys with the fresh tomato crunchy onion the salty feta and tossed in the homemade lemon vinegrett oh my goodness it is so good you can add a pinch of salt and pepper to this if you’d like but I like to wait till right before eating just so the salt doesn’t draw too much moisture out of the veggies while they sit in the fridge if you’re not meal prepping this I wouldn’t worry about it for reheating I’d recommend warming up the meatballs separately i just toss them in the microwave in a covered dish with a little splash of water since this dish already has some good healthy fats I make a low-fat taziki sauce to go on top recipe details are down below the full printable versions on my blog enjoy and don’t forget to follow for more easy high protein recipes
