Ingredients:
• 4 ounces (1 cup) Kalamata olives, pitted & sliced or diced
• 2 ounces (½ cup) dried figs, diced
• 1 ounce (¼ cup) walnuts, toasted & chopped
• 2 Tbsp curly parsley, finely chopped
• 2 tsp balsamic vinegar
• 1 Tbsp e.v. olive oil
Instructions:
• Slice the olives by hand or use a food processor with the slicing attachment.
• Slice off the tiny stem (if applicable) of the fig and dice. Expect this step to be sticky! Finely dice the parsley. Chop the walnuts.
• Mix all ingredients together in a bowl except the parsley. Add olive oil or balsamic vinegar to taste.
• Gently fold in the parsley, leaving a little to sprinkle over the top if desired.

this is a calamatada olive and fig tapenad really easy appetizer or snack i’m dicing up some walnuts and um this is also easy to do if you just put it in a ziplockc bag and hit it in the back of the bag with a spoon until it’s broken up into bite-sized chunks anyway I just have to chop those up and you can use almonds you can use pecans you can use whatever nuts you like and chopped up a little bit of parsley um had more than I needed so set some on the side put some in the bowl chopping up some figs here and figs are soft and sticky you can also use dates you could use dried apricots uh whatever you like moving on to the olives just going to dry those off and um I’m dicing these but you could slice these uh you know think about what you want to eat on it could be chunkier or you could dice it finer for crackers um so put that all in a bowl and mix it all around going to add a little bit of balsamic vinegar and a little bit of olive oil and then um taste it you know you might want a little salt depends on how salty um the olives are uh so I’m going to add a little bit of that balsamic vinegar and a little bit more olive oil stir it all around serve this on crackers today but um I’ve served this over salads i’ve served this on pastas on chicken uh it’s a great snack it’s a great appetizer you can make it ahead of time take it to potlucks picnics take the beach the mountains whatever anyway you can find this appetizer recipe calamata olive and fig tapenod on eatsimplefood.com
