* 400g extra-firm tofu (pressed and cut into slabs) * 1 tbsp cornstarch * 1 tbsp olive oil
**Mango lime sauce**
* 1 ripe mango, peeled and cut into cubes * Juice and zest of 1 lime * 1 tbsp soy sauce * 1 tbsp maple syrup * 1 tbsp sriracha * 1 tsp grated ginger * 1 clove garlic, minced * 1 tsp chili flakes (optional for extra heat)
**Serve with**
* Rice * Mango and avocado salad
###Instructions
1. Add the sauce ingredients into a food processor and blend until smooth. Set aside. 2. In a container, add cornstarch, salt and pepper then add the sliced tofu, cover and give it a shake. 3. Heat up a pan with a little oil then fry the tofu until all crispy. Remove. 4. Add the sauce to the pan to warm up then add the tofu and coat in the sauce. 5. Serve up with some rice, mango and avocado salad then enjoy!
