A quick and easy recipe for Greek shrimp pitas with hummus, veggies, and feta.
Ingredients
1 lb shrimp (peeled & deveined)
1 lemon
2 cloves garlic, minced
1.5–2 tsp dried Greek seasoning
1 tbsp olive oil
Salt & pepper to taste
4 pitas
1/2 cup hummus
1 cup cherry tomatoes, halved
1 cucumber, diced
1/3 cup crumbled feta
Instructions
In a bowl, combine shrimp with half the lemon juice, garlic, Greek seasoning, olive oil, and a pinch of salt and pepper
Let marinate for 10–20 minutes
Dice cucumber and tomatoes. Toss with the remaining lemon juice, salt, and pepper
Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side, until pink
Warm the pitas, spread hummus inside each pita, add cooked shrimp, tomato-cucumber salad, and a sprinkle of feta.
