I wondered why no one makes pesto with purple basil. I found out why.

I make a black olive tapenade at work, and it always looks like this, ive tried adding roasted red peppers, and double the herbs so it doesnt look so “poopy” but the black overwhelms everything. Delicious but a bit gross looking.

I’m not sure why, but the beetles won’t touch my purple basil. They chomp my green basil and then shit little bits of beetle turd all over it, but the purple ones are untouched

If you have one, I recommend a mortar n pestle. Yes it takes a lot longer but the forearm workout is nice and (I think) it comes out tasting better.

Pfff. If people can handle grey fish eggs and caviar, what’s a little grey pesto?

Just watched an episode of Below Deck where the chef made a “black pesto”… wonder if this is what he did. The guests said it was the best dish they had.

That is an insane ratio of garlic and pine nuts to leaves.

That looks like a lot of damn pine nuts.
StingingSwingrays
Your ratio of leaves to pine nuts + garlic seems… perfectly inverted
Usually I do about
3 cups greens (which somehow melts into just about 1.5 cups blended)
¼ cup pine nuts
1-2 cloves garlic
¼ wedge lemon
½ cup parm
101bees
I was thinking about doing this 🤣. Thanks for the warning.

Happens to purple carrots when cooked, by the way. Could vary depending on method but don’t count on it
