Ingredients Used:
1 chicken breast, sliced into 2 and pounded thin
Paprika
Italian seasoning
Onion powder
Garlic powder
Black pepper
Salt
1/2 cup all purpose flour + 1/2 cup Parmesan cheese
1/2 cup onion, diced
Red pepper flakes
1/2 can tomato paste (3oz)
1/4 cup vodka
2 cups chicken broth
1 cup heavy whipping cream
1 cup uncooked rigatoni
Handful of Parmesan and mozzarella cheese
Fresh basil, for garnish. Chopped

Let’s take comfort food to the next level by making this one pan chicken parmesan with creamy vodka pasta. Start by drizzling one teaspoon of oil over two thin pieces of chicken breast. Then season them with paprika, Italian seasoning, onion powder, garlic powder, black pepper, and salt. Thoroughly rub on the seasonings. Then repeat the process on the other side and set it aside. To a separate plate, pour on half a cup of all-purpose flour along with half a cup of Parmesan cheese. We’re then going to season our flour with the same seasonings we used for our chicken. Then give it a good whisk. To a deep pan over mediumigh heat, lightly coat the bottom with some oil and allow it to heat up. Once hot, we’re going to dredge our chicken and our flour mixture. Shake off the excess. Then cook our chicken for 4 minutes on each side or until golden and cooked through. Once done, remove and set aside. To the same pan, lower the heat to medium. Then add in half a cup of diced onion. Let’s season with salt, pepper, onion powder, garlic powder, Italian seasoning, and a bit of red pepper flakes. Then, we’re going to sauté everything for 2 minutes or until fragrant. Once fragrant, scoop in 3 oz or half a can of tomato paste. Then, stir that in with our onions for 1 minute. At this point, carefully delaze with a four of a cup of vodka. Then simmer for 5 minutes before pouring in two cups of chicken broth. We’re now going to pour in one cup of heavy whipping cream and stir that in. Now, just up the heat back up to medium high and allow our sauce to come to a gentle simmer. Once our sauce is at a simmer, carefully pour in one cup of uncooked ratoni and allow it to simmer for 10 minutes. Just be sure to stir often and add chicken broth as needed if the sauce gets too thick. After 10 minutes, our pasta should be cooked through. So now we’re going to turn off the heat and add our chicken right on top. Now just sprinkle on some mozzarella and Parmesan cheese. Then we’re going to cover our pan with the lid and allow it to sit for a couple minutes or until the cheese melts. After two minutes, our cheese should be melted. So now we’re going to garnish with some fresh basil. Then our chicken parmesan with vodka pasta is done and ready to enjoy.
