Are you tired of plain ol’ boring pasta salad?? Well give this one a try! It has so much flavor and texture! The texture of Israeli Cous Cous is SO much better than the regular! Has a nice little chew to it that stands up really well to the roasted veggies! Give it a try!

Ingredients;
2 C water
1 C Israeli Cous Cous
2 t oil
1/4 t salt

For the Veggies:
Use whatever kinds you like I used:
1/2 Large red bell pepper
1 small yellow onion
5 cloves garlic
1small Green Zucchini
1 small Yellow Zucchini
1/2 C sliced carrots
1 green onion sliced
1/4 C chopped Italian parsley

Dressing:
1/2 C EVOO
2 T balsamic Vinegar
1 T honey
1t dijon mustard
salt and pepper to taste
1 T fresh lemon juice

hi everybody welcome back to my channel if you’re new here I am so happy you stopped by well now that summer is here it is time for pasta salad it is a great thing to bring to a picnic barbecue family gathering but today we’re not going to be making any old pasta salad now this is the kind of pasta salad that you’re mostly going to see at a gathering and there is absolutely nothing wrong with that but if you want to step up your game you’re going to want to try this roasted vegetable Israeli couscous salad it’s so delicious and super easy to make to get started you can use any vegetables you like but I’m using carrots zucchini i have both green and yellow some garlic some onion and some red pepper now I’m just placing these all in a bowl and I’m going to add a little bit of oil to coat the vegetables and you just want to lightly coat them not too much oil and then I’m also adding some Italian seasoning and some Benson’s Table Tasty saltree but you can also use salt i’m just trying to cut down on my salt this is excellent it’s on Amazon so just place those in with the vegetables give it a nice toss and place them in a single layer on a parchment line baking sheet you’re going to roast these at 400 for about 15 minutes now this is what they call pearl couscous it’s like regular couscous but it’s larger and it has a better texture a lot of people think couscous is a separate grain but it’s really a pasta it’s just made with flour water super easy and simple now all you’re going to do to make the couscous is boil your water with a little bit of oil and add it in you’re going to wait till it comes to a simmer and you’re going to put the lid on for 10 minutes and then the water will get absorbed by the couscous and it will look like this now put it in a bowl and let it cool for a few minutes now these have been roasting for 15 minutes and you want them to have a little bit of brown but you don’t want them mushy now let those also cool a little bit and we’ll make our dressing a half a cup of olive oil 2 tbsp of balsamic vinegar a tablespoon of honey a dash of salt pepper fresh lemon juice and dijon mustard and I will have the exact measurements in my description box and it will look like this now I’ve kind of chopped up my vegetables a little bit more and we’re going to add that to our couscous and then just stir it all together now the couscous might clump up a little bit but don’t worry now what I like to do is add most of my dressing while the salad is warm it’s going to help it absorb more it will look like this and then once you’re done and you’re ready to serve I like to add the rest of the dressing so it has a lot more flavor now I also like to add some sliced green onions and chopped Italian parsley just mix those in and here you go it is going to be a hit at any of your gatherings i promise [Music]
