I got a Whytner ICM-200LS second-hand from a chef I worked with when he moved and couldn’t take it. I’ve been watching the hell out of Polar Ice Creamery’s videos before I gave this a shot.

The recipe is:

200g Boiron yellow passion fruit puree
125g white sugar
55g Karo corn syrup
195g lactose free whole milk
386g whipping cream (33% fat)
30g skim milk powder
1.2g xanthan gum
A pinch of salt

I kinda fudged around when I was making it, added some stuff in the wrong order and such, and I did a cold process rather than heating anything. I mixed al the dairy stuff (including the milk powder) together and whisked it in a bowl.

Then, because I’m an idiot who does things the hard way, I poured the corn syrup into the bowl I had mixed the sugar, salt, and xanthan gum into, creating an absolute mess of things. The sugar and syrup created like rock candy in the bowl. Rather than give up, I just poured the passion fruit puree into the sugar mixture and whisked it with a tiny whisk until it was as incorporated as I could get it, scraping the sides as much as possible to get the crystallized sugar off the sides.

Then, I whisked the milk mixture a bit more and, extremely slowly, I poured in the passion fruit mixture, because I was worried it would curdle since passion fruit is so damn acidic (but I wondered if adding the salt and sugar might have helped tame the acidity a bit and if I might have made a lucky mistake). Whatever the case, it worked out perfectly and formed this nice luscious passion fruit flavored whipped cream kinda consistency on top.

Figuring that was good enough, I popped it into the fridge for an hour and a half, then churned it for around 30 minutes. After four hours in the fridge it’s fricikin delicious. I can’t even accurately describe the flavor, the way the passion fruit’s tangyness almost brings out the buttery flavor of the cream, it’s so weird and awesome. 9/10 easily.

  2. I forgot to mention I strained it after it chilled. There weren’t any sugar crystals left in the mix, so they must have dissolved at some point between my vigorous stirring and chilling in the fridge.
