pesto or as locals call pesto alaj noezi sounds so fancy and gourmet right don’t let it intimidate you is just a quick blitz in your grinder of few classic ingredients and you can make so many beautiful dishes once you make your homemade pesto you’re never going back to storebought are you ready for the classic fresh taste of summer picture this a heaping spoonful of vibrant flavorful green nutty and garlicky sauce your very own pesto i promise no store-bought sauce will even come close to the taste and freshness of making it yourself no chance i’m Alana with Gypsy Plate and today we are making one of my absolute favorite pesto hey Summer is here people and it’s here to stay for a long long time it’s a gazillion degrees outside here in Florida but then that’s when all my herbs come alive and seems to grow overnight especially my basil he looks happy and seems to shout at me “Hey come here get me.” That’s when you know the jar of pesto starts dancing in front of my eyes why not it’s truly a celebration of this sweet aromatic plant and just like that pesto happens it’s a pesto night tonight now let’s talk about the ingredients I’m using for the pesto today first we have got fresh basil i mean look at this beautiful happy basil if you don’t have it in your garden or kitchen already you can find it pretty easily at farmers market or local produce stores in the summertime you can also grab potted basil plant from your grocery store chop some leaves for today and let it keep growing for more pesto down the line next up pine nuts they add nutty buttery flavor to your pesto if you’re looking for more budget friendly options you can also use walnuts for that perfect garlic kick we’ve got fresh whole garlic cloves you just need couple of them to have that nice subtle pungent note you can always add more if you’re into garlic but remember you can’t take it out once inside so you use just one or two at a time when you’re grinding your pesto when it comes to cheese you’ve got a choice between Pecorino Romano or Parmesano Reiano the key thing here is to use hard salty a cheese nothing soft and creamy here we want some texture and substance in your pesto for the oil you can use extra virgin olive oil or lighter olive oil personally today my mood and my pantry are telling me to go with extra virgin but either will work as long as it’s good quality to season we have got some coarse salt here adjust to your liking and last but not least we are adding a little lemon juice for that extra tanginess trust me once you try it with lemon juice you will never go back so that’s what we are working today for this perfect pesto let’s start grinding traditionally some Italian grandma would make this classic mix in your mortar and pestl but come modern times you can do the same in your grinder or food processor with quick pulses that same grandma would scoff at some modern variations people started trying with different herbs greens playing with different nuts and cheeses equally delicious though but today let’s make that grandma happy and stick to the basic classic basil pesto so let’s get on with our recipe before you start blending wash your basil leaves gently and pulse them with your garlic pine nuts cheese and salt few times until everything is chopped you need to pulse and not blend as you need a rough pesto texture not too thin or smooth [Music] give them few pulses at a time and then with the spoon try to scrape down the mixture so you will be able to pulse some more then I’m going to slowly drizzle my olive oil into my blender and pulse it few times i like to drizzle in between pulses and making sure everything is well combined and emulsified if needed stop and scrape again the sides of the blender to make sure everything is getting mixed this beautiful Italian sauce comes straight out of Genanoa up in the northern Italy fun little fact the name pesto actually comes from the Italian verb pesare or in the Genanois dialect pesa which basically means to pound or to crush so yeah it’s just about crushing up good stuff into something delicious and finally don’t forget that lemon juice it’s going to add the beautiful tangy zing to your pesto now look at that pesto that beautiful vibrant green color it’s looking absolutely delicious all you have to do is taste for salt maybe a little bit more lemon juice it’s your pesto you have to like this so let me see how it turn up m I think all it needs is a little bit more lemon juice i like that citrusy note in there [Music] m perfecto that’s it your own very own homemade pesto i love how this green sauce can be used in so many ways i can drizzle it on pasta spread it on sandwiches or even use it to marinate things it’s so fresh made with just basil leaves and olive oil and you can really taste that freshness the flavors blend together so well it feels like a taste of Italy here the best part is super easy to make if you have a blender you’re just few quick steps away
