My Mama’s Pesto Salmon with Green Beans & Potato Salad

Ingredients:
– 2 cups cooked baby red potatoes cut in quarters
– 1 large tomato
– 2 cloves garlic
– 8 oz cooked & drained green beans
– 4 1/2 tbsp extra-virgin olive oil, divided
– 2 tbsp red wine vinegar
– 2 tbsp fresh basil
– 2 tsp salt & pepper separated
– 1 tsp oregano
– 1/2 tsp red pepper flakes
– 2 6-oz. skinless salmon fillets
– 1 diced shallots
– 2 tbsp prepared sun-dried tomato pesto
– 1/2 cup white wine
