dry brined for a few hours, probably not long enough. oven at 225 for about 1.5 hours. blasted on the grill at 500 or so for 3 turns a side around 60 seconds each turn. rested for 10 min. going for medium rare, I’d say landed a bit more medium.

in hindsight I think I would have gone a little lower, a little longer and let it rest a bit more but no complaints. how did I do?!

    Don’t dry brine longer, it’ll degrade the interior past eight hours or so. Letting it sit unseasoned on a rack for a day is a better idea. Or just towel dry it more aggressively right before searing to improve browning. Otherwise nice cook though, that is an appropriately modest amount of char, not burned to hell like most grilled thick steaks in this subreddit.

    Looks like a sold cook. My first one was in a searing cast iron after on the grill about the same temp for the same time. I let mine get to room temp first. A lot of people don’t care for that method, to each their own. I think it renders the fat better. 🤷🏻‍♂️

    The temp looks perfect. Get that grill as hot as it will go and only flip it when it seems like it’s about to burn
