Full written recipe – Tomato Macaroni Soup

Ingredients:
Soup Base
ONION | प्याज़ 1 MEDIUM SIZED. (ROUGHLY CUT)
TOMATO | टमाटर 6 NOS. (ROUGHLY CUT)
GREEN CHILLI | हरी मिर्च 1 NO.
GARLIC | लहसुन 10-12 CLOVES
CORIANDER STEMS | धनिये के डंठल A HANDFUL.
SALT | नमक A LARGE PINCH
OIL | तेल 1 TBSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
CUMIN POWDER | जीरा पाउडर 1/2 TSP
HOT WATER | गरम पानी AS REQUIRED
WATER | पानी AS REQUIRED (for blending)
Final Cooking
HOT WATER | गरम पानी AS REQUIRED
BLACK PEPPER | काली मिर्च TO TASTE
OREGANO | ऑरेगैनो 1 TSP
BLACK SALT | काला नमक A LARGE PINCH
KETCHUP | केचप 1 TBSP
SUGAR | शक्कर A PINCH
CARROT | गाजर 1 SMALL SIZED. (DICED)
FRENCH BEANS | फ्रेंच बीन्स 7-8 NOS. (DICED)
CAPSICUM | शिमला मिर्च 1/2 MEDIUM SIZED. (DICED)
SWEET CORN | स्वीट कॉर्न 1/3 CUP
MACARONI | मैकरोनी 75 GRAMS
LEMON JUICE | नींबू का रास 1 TSP
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:Add all the ingredients of the base into a pan, switch on the flame to high & let all the ingredients get hot.
Cook over high flame until the tomatoes turn soft then add hot water, cover & cook over medium low flame until the tomatoes turn completely mushy, you can remove the lid & stir at intervals.
Once the tomatoes turn completely mushy, switch off the flame & let the mixture cool down completely. Transfer the cooled mixture into a mixer jar, add water & blend it into a fine puree.
Strain & add the puree into a kadhai or a saucepan, add hot water to adjus the consistency, keep the soup slightly thin at this stage, alonf with black pepper, oregano, black salt, ketchup & sugar, sti well, bring the soup to a boil & let it simmer for a few minutes.
Once the soup has simmered for a couple of minutes then add the macaroni along with all the veggies, stir well & cook the veggies & pasta for 8-10 minutes or until the pasta is cooked.
Lastly taste & adjust seasoning & the consistency if required according to your preference & lastly add some lemon juice & fresh coriander.
Your quick, healthy & tasty Desi Macaroni Soup is ready.

Welcome to YFL. As the monsoon season starts, we make
different types of soups at home. And there’s a soup that my mom makes,
which is a tomato soup with desi spices. It’s a tomato soup with veggies and pasta. It’s an elbow-shaped pasta. And it becomes a wholesome meal. All of us family members sit together and enjoy it. The best part is that it is a very simple recipe. It’s a spicy soup. And when you drink it, you get veggies and pasta in between. It’s fun. It becomes a wholesome meal. So make this recipe by the time it rains. It’s a very easy recipe. Let’s see how it’s made. First, take a pan. Cut some veggies. Take a medium-sized onion. Roughly slice it. Add it. Take 6 tomatoes. Cut the tomatoes in the middle. Remove the eyes. Cut the tomatoes into quarters. Take a green chili. Roughly chop it and add it. Add 10-12 garlic cloves. Add the coriander stalk. It gives a lot of flavor. Add a pinch of salt. And 1 tablespoon of oil. When we were doing everything, the stove was off. Start the stove now. Once the pan is hot, stir it well. Cook the mixture until the tomatoes become soft. It will take 5-6 minutes for the
tomatoes to become soft. Once the tomatoes become soft, lower the flame and add some spices. 2 tablespoons of Kashmiri red chili powder. 1/4 teaspoons of garam masala. And 1/2 teaspoons of cumin powder. Stir it well and cook it for 1-2 minutes. We are making a desi masala soup,
so we need to add some spices. Add some hot water. Mix it well. Cover it and cook it for 7-8 minutes on medium flame. By then, the tomatoes and spices will be cooked well. After 7-8 minutes, remove the lid. As you can see, the tomatoes have become mushy. Everything is cooked well. Turn off the stove now. Let it cool down to room temperature before grinding it. Once everything is cooled down, add it to the mixer grinding jar. Add some water as well. Blend everything well to get a fine texture. If you are making soup in monsoon, you can trust our YFL Home

As you can see, there is nothing left in the sieve. Only a few seeds are left. Everything else is in the pan. There is zero wastage. We need a thin soup consistency. You can see the consistency. Add freshly ground black pepper. Add 1 teaspoon of oregano. Add a pinch of black salt. Add 1 tablespoon of tomato ketchup. Add a pinch of sugar. This flavoring will make the soup spicy. It will be fun to drink. After stirring, let the soup simmer on the side. Let it reduce a little. The flavors will come out. Meanwhile, let’s prepare the vegetables. I have taken beans, carrot, and capsicum. I have also taken sweet corn. Peel the carrot. Cut it into planks and dice it. You will get carrot dices. Take the beans. Collect the beans and cut the tops. Cut the beans into dices. You can see how I have cut the beans. Lastly, I am taking capsicum. I have taken 1/2 capsicum. Cut the capsicum lengthwise. Then, dice it. I have cut all the vegetables similarly. I have also taken sweet corn. The specialty of this soup is that you can take vegetables of your choice. If you don’t like any of the vegetables, you can remove it. If you like broccoli, zucchini, or mushrooms, you can add the vegetables of your choice. Cut the vegetables into small pieces. It will be fun to eat and drink the soup. Once the vegetables are ready, let’s check the soup. You can see that the soup is simmering well. It has reduced a little. At this stage, I am going to add macaroni. I have taken elbow-shaped pasta. I am adding 75 grams of pasta. I am also adding the vegetables that I had cut. After adding all these things, you have to cook it for 7-8 minutes so that the vegetables are cooked and the pasta is also cooked. In 7-8 minutes, the pasta will be cooked perfectly. The pasta will leave a slight stain. This will make the soup a little thicker. You can see that after 7-8 minutes, our soup is looking so beautiful. There are colorful veggies along with elbow-shaped pasta. At this stage, you have to check the pasta. You can see that our pasta is perfectly cooked. You also have to taste it. What a beautiful flavor! You have to adjust the seasoning here. At the end, you have to add a little lemon juice and a little fresh chopped coriander. You have to stir it well.   2. This is a very close version of minestrone soup available at Fasta Pasta. Instead of elbow pasta it has dintani pasta. Veggies include Zucchini, pumpkin, onion etc
