
My freezer saved me on a busy day. Leftover black lentils from the freezer. Leftover pomegranate-yuzu dressing.
I chopped up cherry tomatoes, radicchio, cucumber, radish, and carrots.
I added pistachios, pumpkin seeds, and sumac to finish.
Good mix of textures here and I got in my beans, seeds, and nuts.
