4 cups allโpurpose flour
1 tsp baking soda
A splash of cornmeal (for dusting)
2 tsp salt
2 tbsp honey
2 cups milk
1 cup active sourdough starter
Mix dry ingredients (flour, baking soda, salt); combine with honey, milk, and starter to form a soft dough.
Mix till thereโs no dry mixture, then let the dough ferment overnight on the counter
Next day: Add baking soda, salt, and an additional cup of flour. Knead until smooth, about 10 minutes by hand. Let rest for 10โ15 minutes.
Shape muffins (I cut with a glass jar), dust rounds with cornmeal, and cook on a griddle or skillet until both sides are golden brown. About 4 minutes each side with an internal temp of 190 degrees Fahrenheit.

Oh I almost forgot! After you shape the muffins, lay them on a non stick mat and cover with a towel. Let rise 1hr before cooking.
Iโve NEVER been able to perfect English muffins! I can bake anything, I donโt know what it is lol.
