Here’s a delicious recipe to use up the abundance of zucchini from your summer garden, or farmer’s market. These Stuffed Zucchini Boats are easy to prepare, and incredibly versatile. Easily, substitute eggplant and/or yellow squash for the zucchini.

The zucchini are generously filled with a savory sausage meat sauce, topped with gooey mozzarella cheese, and baked to perfection.

Alternatively, make this zucchini recipe vegetarian by replacing the sausage with a meat alternative, like mushrooms or tofu

my local farmers markets have opened for the season and I could not wait to grab zucchini to make these stuffed zucchini boats I’m using hot sausage I always like to buy it in the links cuz I think it has more flavor once the hot sausage is almost fully cooked I’m adding in some green peppers cuz they looked really good A little bit of garlic let those soften you can use fresh tomatoes but I just wanted to use a marinara sauce today add that a little fresh basil and just let this simmer while we prepare the zucchini I mean don’t they look beautiful so cut them down the middle lengthwise and then we’re just going to take a spoon and scrape out the seed part try not to get too much of the flush if you can so you’re just kind of creating a boat then you’re going to lay these out sprinkle them with a little bit of salt and it’ll draw out any extra moisture blot that with a paper towel have an oven safe pan or baking dish and you’re just going to line the bottom with a thin layer of that sauce place the zucchini season the insides with salt and pepper then sprinkle in shredded mozzarella cheese then you’re going to fill these babies up with that sausage mixture and honestly you could use any kind of meat you could use ground beef chicken ground turkey or even mushrooms if you wanted to make it vegetarian use the remaining sauce to kind of fill in the gaps add more shredded cheese to the top these are going to go in covered at 350 for about 30 to 35 minutes uncover and then broil to get that cheese nice and gooey and brown a little more fresh basil I serve these tonight with just some creamy mashed potatoes this is one of my all-time favorite ways to make zucchini you got to try this recipe

  1. Make sure you follow the directions to dry and salt your zucchini. Mine took twice as long to cook as I did not follow the instructions exactly
