Cooking brisket for the weekend. Plan is 24 hours at 155F then smoker for 3 hours at 300F.
Q: have meat in primary container of Hefty Jumbo food bag; confident it’s stable up to 158F and BPA free. However, I double-bagged to prevent leakage over long cook (picture). No idea what the outer bag is made of, but much lighter material. Before I get too far into this, is anyone aware if the primary bag will prevent BPA seepage should the outer bag have BPA?
Options limited due to bag size.

Can’t speak to bpa seepage, but my understanding is that any cook this long at this high a temp should be done in a vacuum bag. Your hefty bag may be able to handle 158°, but for how long?
Maybe it’s just a photo, but that double bagging looks loose with tons of air pockets.
After that, there was a nice awkward smell and the outer bag was leaking pretty solidly already, just reset the whole setup and double-Hefty bagged it. Was just down to my last two. Would still love to know the answer if there are any chemists in the gronp.
Just look for BPA free vac bags online. I like the brand Wevac. Good prices, decent thickness and a variety of sizes. Ive done beets at 185 with no problems at all. You would meet a vac sealer though.
