Home made 6 hour pork Pibil. With simple but v.hot salsa Roja (roasted & blended). Not a bad way to spend a rainy Monday lunch in Derbyshire (can't get anything resembling decent tacos here).
Question – how do people best rehydrate frozen corn tortillas? Mine always come out a little dry/crumbley using the microwave – dry pan frying doesn't work much better… (We have to import or make them as the packet bought ones here are awful so freezing isn't really optional).
