I’ve got this sink full of peppers. I plan to can them but struggle to estimate the number of jars need if I slice all of these. How do y’all estimate the jar space needed?

Not specific but sliced up you can fit a fuck ton more than you think in a just a pint jar. try one for a idea.
I generally cut them up and jar them then make the brine.
Get what you think you need. If it’s not enough, go get more. If it’s more than enough, you got jars for next time. No need to have a perfect plan.

Never canned, but I would make some Cowboy Candy for sure.. basically candied jalepenos.

In my experience, it’s about a pint per pound (roughly 500 ml per 500 g)

I would say you sink holds four quarts loosely and not overflowing with an inch or so of sink rim at the top. Fully overflowing, six quarts. This is possibly two quarts.
