So, we are going to be making a saffron orzo risoto with mushrooms. And if you follow along, I’ll show you what to do. We’re going to start out with a little bit of olive oil in a pan. And then once that heats up, we’re going to add half a diced onion and two to three cloves of minced garlic. Then you’re going to add in your chopped mushroom stems and season with salt and pepper and cook that up until it’s nice and fragrant. Taste your food as you go and make sure it’s tasting good. Then you’re going to add in your sliced mushrooms, about 10 mushrooms. Season with salt and pepper, and sauté those up until they’re browning and cooking down really nicely. That should take about 10 minutes. Then you’re going to add 1 oz or 2 tablespoon of tomato paste and stir that in really well. Add a sprig of thyme and a bay leaf. And then add two diced tomatoes. [Music] And then you’re going to add 10 oz of orzo. Stir to mix everything together really nicely. [Music] And then you’re going to add 2 and 1/2 cups of chicken stock. Now, this is what makes a risoto different than a rice. With a risoto, you let the chicken stock reduce down, and then you keep adding chicken stock until the orzo is cooked all the way through. So, we’re going to add some more later. Now, right now, you’re going to add just a pinch of saffron. Saffron goes a long way, and it’s very expensive, so you only need a little bit here. After about 10 to 15 minutes, the liquid should have reduced down. And when it’s reduced by about 75%, you’re going to add another cup or two cups of chicken stock. You just want to cover the orzo and then let it reduce again. And then this time, when it’s reduced all the way down, you’re going to add about 1/4 cup of heavy cream and stir that in. Remove the bay leaf and thyme and season your dish with salt and pepper to taste. [Music] And you are ready to serve. Enjoy. [Music]
