  11. Am I the only person who cooks the onions with oil salt and pepper before adding the veggies and water? I always see photos of pots of uncooked and even unpeeled onions in stock 🧐 cooking the onions for 5-10 mins adds so much flavor

    I did this once – with a lot more veg, but chef came over and asked why I didn’t cut the veggies. I just said, I dunno. Turns out – if you are doing a full boil overnight, you can just chuck veggies in. If you are doing a short 2 hour – things need cut. Makes sense to me. We have 20 gallon kettles, (well 1 out of 4 work) so we can make proper broth.

    According to homeopathic cooking, just a few atoms of carrot in an ocean of water would make an infinitely strong stock, so maybe he thinks he’s doing something clever after trusting a health grifter.
