    This graphic not including Fukuoka is kinda insane. That said the best ramen I had is in Okayama, it’s called Happo. Shoyu-Tonkotsu broth.

  2. The best ramen I had in my life was actually in LA. There’s a small hole in the wall called Foo Foo Tei that serves seafood champon with mussels, shrimp, fish balls, and a wide variety of seafood in the classic white broth.

    I like my noodle soups to have a wide variety of vegetables, meats, and seafood, though mainstream ramen tends to be more simplistic.

    Hakata station, Fukuoka. Downstairs in the L-shaped food passage. Can’t remember its name, hopefully somebody else knows it.

    Tsukemen Kirari near Gekeikan brewery in Kyoto. Simple and outstanding.

  9. Most memorable ones for me were Onomichi style ramen at Tani or Maruboshi, and Tsukemen at Ginjo ramen Kubota (Kyoto) and Niboshi Chuka soba Suzuran in (Shinjuku).

    Ramen Nagi, 2am, Golden Gai. It’s at the top of the short list of places I will absolutely return to in Tokyo.

    Edit: I forgot about Bokkoshi in Osaka! Super rich Peitan that’s infused with the grilling charcoal if you’d like. Makes for a great smoky bowl! Don’t miss it!

    A hole in the wall near the train station in Niigata. Great assari shoyu ramen. It’s the polar opposite of the rich Hakata style rich tonkotsu ramen and I like it so much better.
