As a remote Engineering Manager, my weekdays can get hectic – after work, I often have no energy to cook. That’s why Sunday meal prep has been my lifesaver for years. In this video, I’m sharing what I cooked this Sunday to make the week ahead easier (and tastier!):
🍲 Turkish Lentil Soup
🍆 Imam Bayıldı (a traditional eggplant dish)
🥕 Oven-baked veggies (perfect with fish or chicken)
🥒 A super easy zucchini meal
I also slowed down in the evening with some Luna time 🐾 and continued reading The Lion by Nelson DeMille, I highly recommed John Correy series.
