
🥗 Today’s bean concoction:
1 can black beans (rinsed)
1 cup defrosted frozen corn
1 chopped tomato
1/2 cup diced cucumber
1/2 cup diced carrots
1/4 cup minced red onion
1/4 cup chopped parsley
✨ Dressing:
1 tsp Dijon mustard
2 tbsp apple cider vinegar
4 tbsp olive oil
Pinch of salt + pepper
Tossed it all together, and I have a crunchy, colorful quick meal for the next few days!

I make a version of this weekly. Allllll summer. I don’t like red onion Raw, so I get the pickled red onions from Trader Joe’s.
I have had a busy few weeks and I am off my bean rotation. Thank you for the good ideas! I gotta make some beans tomorrow to eat for lunch this week. 🙂
