I don’t cook much as I’m currently living alone but for meal prep this week I pulled out all the stops and went full fledged involvement.

I reconstituted the black beans by soaking them overnight, cooked them on the stove all afternoon, then drained and added some enchilada sauce and a bunch of seasonings. The chicken thighs were roasted, then put atop a bed of homemade cilantro lime jasmine rice and beans.

I then drizzled homemade enchilada sauce over it all, then topped with shredded cabbage and tomatoes.

So delicious!
