Created this by failing at making enchiladas, but it turned out really good for pretty cheap.
Ingredients:
6 corn tortillas (I recommend making your own out of masa, water, and salt to about a quarter inch thick)
1 can black beans rinsed and drained
1 diced pepper (I used a poblano but would work well with bell pepper, jalapeño, etc.)
1 jar of salsa Verde or enchilada sauce
Shredded cheese
Steps:
1. Preheat oven to 375
2. In a small casserole dish put a third of the sauce in an even layer
3. Put down two tortillas over the sauce
4. Put about half the beans and peppers over tortillas and a sprinkle of cheese
5. Repeat 3 and 4 once
6. Top with final 2 tortillas
7. Top final layer with the rest of the sauce and cheese
8. Bake until cheese is bubbly and cooked through (about 20-30 minutes)
9. Cool for 5 minutes and enjoy!
