This yields very soft buns, easy to squish for a perfect and easy bite into the burger.
I usely ask my butcher to ground some beef short rib for the patties, but he didn’t have any left. He suggested some beef shank mixed with some bone marrow, and he was right, the meat was very tasty ! Just the right amount of fat.
Otherwise, nothing too fancy : mayo, tomatoes, salad, red onions, american cheese. The patties were cooked on a gas-heated griddle (plancha).
Those burgers were so so good !!

Looks great. I’m not a huge fan of super bready buns with my burgers, but props.
