[Music] uh today I’m going to be making a roasted cauliflower soup i’ve got about two heads about medium size of cauliflower what I did is I cut it down the middle and cut the core out and then made it into fuettes i also put on I covered it with um olive oil and salt and pepper i’m going to put it in the oven and roast it at 425 we’re going to go for 25 minutes flip it over and then go for another 20 minutes so I’ve got my oven preheated i’m going to put it in the oven for 25 flip it and then for another 20 minutes i’ll see you back then [Music] okay as you can see I took my cauliflower out of the oven it’s done i’m letting that cool for a minute in my stock pot I have it on a medium heat and I’m going to put in um one medium onion diced into about two teaspoons of olive oil i’m going to let that sauté for about 7 minutes until it’s translucent so you’re going to let that sauté for 7 minutes until it’s translucent and I’ll be right back [Music] add five cloves of garlic which I chopped up i’m going to give that a stir for about a minute and while that is stirring I’m going to add in two teaspoon of cumin 2 and 1/2 teaspoons of smoked paprika one teaspoon I mean a half a teaspoon of um turmeric and a teaspoon of sumac and I’ve I’ve used sumac before or this is the bag I get this is the brand I get doesn’t mean that’s the brand you have to use stir that until all the um aromomas are blended in oh my god it smells so good you guys know how I love my Mediterranean spices let that cook for another second and then I’m going to take and add 3/4 of my cauliflower to the pot i’m going to give that a stir so they all it all gets blended in with the cauliflower [Music] i’m going to add one cup of water and I’m going to add four cups of vegetable stock i just got done making my vegetable stock this is about six so I’m going to go to four okay so we’re all set there and then I’m going to give that a stir we’re going to bring it to a boil then let it simmer for 5 to 7 minutes so bring it to a boil turn it down let it simmer for 5 to 7 minutes see you in a few [Music] this but I want to leave it a little bit chunky so this thing is noisy so I’m gonna have the cameraman shut it off while I immerse and blend it cameraman can look inside here this is how it is there’s a few little chunky pieces we I put the put it back on the heat i’m going to bring it to a boil i’m going to put the rest of the cauliflower in there [Music] and then I’m going to add two cups of milk i’m going to give it a stir i have to get the lemon juice i forgot that sorry [Music] about a half a teaspoon of lime juice in couldn’t find it in the refrigerator we’re going to bring that to a boil just so it comes through and heats up probably about 3 minutes so I’ll be back in about 3 minutes i said lemon lime juice it’s supposed to be lemon juice i apologize and this is with a soup it’s a little chunky you can put fresh dill on it if you want delicious have a good night see you next week
