This Gourmet Semi homemade meal can be on the table in ten minutes! There are some secrets Italianmmoms and Grandmothers don’t talk about! But sometimes when required will save their life in the kitchen and their family dinner and still keep everyone very happy! In our busy lives there are times when we need to think quick and plan ahead for the next crazy day! This Chicken style Vesuvio will get the job done! Start with a quick garlic, lemon, herb white wine sauce! And then saute portobello mushrooms. So that is the homemade part! The secret part is to know where to buy the best grilled chicken on the bone, then elevate it to homemade! Our local grocery store always has incredible grilled chicken on the bone! You can then make your own potatoes or ours also have potato wedges. After the sauce is done drop the potatoes in to soak up all the homemade sauce goodness, then place the grilled chicken in a baking dish, pour all the homemade sauce with the portobello mushrooms and potaotes over it, cut some lemons on top! Cover with foil and bake 10 minutes! This has saved me so many times and people literally love it everytime! So when your short on time and stress is high, you know you can pull this together and it is full proof healthy, delicious and gourmet! With a little help by having the grilled chicken bought earlier in the day or the night before! It is full proof!
In a sauce pan on medium heat melt 1 tablspoon butter and two tablespoon olive oil
when hot add 3 cloves chopped garlic
1/2 cup chicken broth
1 tablespoon chopped parsley
salt and pepper to taste
sliced portobello mushroom 2 cups Let them Saute well
add juice of one lemon and 1/3 cup of white wine
simmer for a minute add the already made potatoes in the sauce to absorb all the tasty goodness!
allow to simmer for just a few minutes do not cook. mushrooms all the way they will finish in the oven with the chicken and potatoes.
Get a nice serving dish oven safe, place and arrange your already cooked grilled chicken in the dish, pour over the delicious sauce with the potatoes and mushrooms, cover with foil and bake at 350 for 10 minutes! Dinner is served!!!! This will save you more times than you can imagine! I have brought it to last minute occasions where I was suppose to bring a dish but had no time left in a day and was exhausted! It’s a big hit every time!
