12hrs of post oak and mesquite smoking, no wrap. finished in the oven for 3 hours at 170(wrapped in butcher paper). Truly outdid myself on this one.
With the smoke rings I’ve been getting off of double indirect. I don’t see the need for the slo roller. What’s y’all’s opinion?
