I had baked buffalo chicken, cilantro lime rice, and cowboy caviar (corn, cilantro, red onion, tomatoes, beans) in my fridge. I mixed them all together, added a small container of plane Greek yogurt, and el pato can with the ingredients. Spread it onto tortillas, rolled them up. I added another can of el pato on the top as I had no enchilada sauce. I baked at 350 degrees for 20 minutes.
I added shredded cheddar cheese on top and baked an additional 10 minutes. It doesn't look pretty as I transferred to a Tupperware container, but it's cheap and delicious.

Baked at 350 for 20 minutes. Add shredded cheddar cheese on top. Bake another 10 to 12 minutes or until cheese is melted.
Sounds delicious! Corn or flour tortillas? I’m about to give up on corn. They’re so hard to roll without breaking
Isn’t there a subreddit for something like “looks awful, tastes delicious”? Because that’s exactly what I’m seeing here.
I’ve done similar a bunch of times, turning leftovers and pantry scraps into enchiladas. Even dabbled in making the sauce from scratch for a while, but only to cut down on sodium. Definitely an elevation from ghetto burritos, and a Pyrex of enchiladas would last me half a week of dinners.
I repurposed some red beans and rice into enchiladas the other day. Then stuffed two bell peppers the next night. We got 3 dinners out of that one meal.
