Saturday Night Taste

Initially tried to give this a go 2 years ago but it wasn’t ready.
My husband is the wine guy so these are his notes

Initial taste straight out the bottle
-nose was way more expressive this time around
-elegant, clean
-cassis, spices heavy at first
-tight on the pallet at first, focused acidity, but fruits surprisingly expressive at that stage

Decanted it for a while and his first comment was
-holy f* this is good
– on the nose: clean, vibrant, vein of fruit, very limited earth, hint of exotic spices, raspberry, notes of plum, pipe tobacco
-very elegant and polished
-on the palette: more open, acidity focused, tannins are very refined but still a very structured and textured wine. He doesn’t feel we opened it too early but that it could evolve further if left
– palette is very well organized, strong core of fruit while maintaining old world structure.
-finish is complex and lingering, very nice finish but a little lingering acidity (again could sit a bit longer)

Served with a tomahawk steak it was a great pairing.
