Two 2.25oz patties smashed in a 550°F cast iron pan, hit with salt and a light sprinkle of Lawry’s seasoned salt, scraped and flipped, then topped with deli sliced yellow American cheese and covered to melt. Stacked the patties and placed them on a beef tallow toasted potato bun dressed with mayo, yellow mustard, pickles, and thinly sliced white onions.
Shoestring Ore-Ida fries, deep fried in vegetable oil at 375°F for about 4 minutes, removed to drain and reheat the oil, and double fried for about 2-3 more minutes until crisp and golden brown. Hit them hard and fast with lots of kosher salt while still hot.
