Grabbed lunch at a Mediterranean place (a cuisine I know next to nothing about) and they brought me some pita bread with this stuff that they simply call "garlic". Not surprisingly it tastes intensely of garlic, and has a texture somewhere between mayonnaise and horseradish sauce. Anyone who knows Mediterranean cuisine better than I do able to point me how to make this at home?

It’s called toum
Toum or toom in Arabic, skordalia in Greek. [Easy version with a stick blender](https://yumbomcgillicutty.blogspot.com/2012/03/turning-and-two-minute-toum.html).
Toum is what you’re looking for. It is an emulsion of oil and water with a ton of garlic.

You may have trouble getting it to emulsify, but you can add an egg white to get it to come together. We do it in a blender. There’s a little technique at first but it’s so worth it! Very good for you and delicious on everything. Good luck!

Skordalia is made with potatoes or if you want to be bougee blanched almonds
