Having a couple kids under the age of 10, they are amazed I can make this pizza at home. Using the pizza steel and fermenting dough for 3 days, and you can get amazing pizza.

Nothing like them fighting over who gets what for tomorrow's lunch. Small wins is all I really need in life.

To make 3 LARGE 14" pizzas

650g Bread Flour/270g AP

21g Salt

4g Yeast

Dry Mix

Warm 540g filtered water

Pour in 36g of oil and the water

Need 2 min (machine at speed 3)

Rest in bowl for 10 min.

Need 3 min (machine at speed 3/4)

Spit into 3 equal balls

Cold ferment 3/4 days.

SAUCE – Peeled tomato can, add 8g salt, crush, not a soup, it has texture

CHEESE – Whole Milk Mozzarella – I use Galbani

    Pizza Steel in oven, 550 degrees, preheat for 60 min.

    Oh yes- such an ego boost for me when my son tells me let’s make pizza instead of buying it.

    To be fair, my mother made those Chef Boyardee pizzas in a box when I was a kid. We loved them.
