no more room in the fridge and I need to use up this gigantic zucchini my friend Danielle brought me from her CSA so let’s make the deeply comforting vegetable stew called roleta and it can be found in the hills of Tuscany in the fall this stew is really what I give myself when I just need a super shot of veggies and I have no patience and no time I’m literally dumping everything in with a little bit of tomato paste a can of tomatoes and a little bit of salt and some stale bread and then I’m just gonna oh yeah parm rind don’t forget the parm rind I’m going to cook it down and cook it down and cook it down and yeah I’m going to add what’s left over from my pot of beans and I’m going to flow and get that comfort that I’m really looking for in this beautiful dish
