    Eye of Round.
    Roast it to med rare and use on sandwiches or with a gravy. It’s super lean.

    That looks like a boneless leg of lamb, you can even see the impression where the net once was. Whether it is a leg of lamb or some tougher beef cut, your two best options are roast it low and slow to a medium doneness and slice it thinly, or braise it to pull apart tenderness pot roast style. For lamb, I prefer the first option.

  8. Looks like top round to me. We literally call it “the ugliest roast” in our shop. We usually net them to make them look more appealing. Looks like this one was, too.
