Sushi Murakami is located in the Sakura-machi neighborhood of Kumamoto, ran by two Amakusa-born brothers. The siblings trained at their family’s shop before opening their own sushi-ya.
Ingredients are mostly sourced from the coasts of Amakusa. Murasaki-uni acts as the opening piece of the nigiri flow, followed by many well crafted pieces. The highlight for me is the Kuruma-Ebi served spline-cut form with roe, a unique texture and flavor from the conventional serving. Murakami’s Shari strikes a great balance with the seasonal summer catches of Kyushu. The taste is what one will expect from most high-end establishments in major metropoles, but at a fraction of the cost. Highly recommend for travelers wondering Kyushu regions near Kumamoto.
