    For all the people who are thinking it is still mooing, it is definitely not. It looks great to me, but I’d eat it even rarer. Mine seldom has an edge that looks much different than the center. But don’t take my opinion too seriously, because I *do* like my steak practically mooing.

    I think if you cooked it a bit lower temperature (low and slow) you could reduce the bright pink inside. From your question, I’m guessing that is what you are asking.

    That looks like it’s on the side of “rare” but it also looks like it could be a tenderloin, so it should be rare to mid-rare. Cuts like a ribeye with more fat should be medium to render out the fat.

    If there’s such a thing as medium rare minus, this is it. Not rare but not really medium rare.

    For me:

    Filet is meant to be black &blue

    NY is medium rare

    Loin-cut Ribeye is medium rare

    Chuck-end Ribeye is medium

    Sirloin is medium rare

    Skirt is medium

    Flank is a hard call, medium max I guess

    Hangar is medium rare

    The fat isn’t fully rendered, and it looks a bit too chewy for my personal enjoyment, but as long as you enjoyed it, congrats. You did it.

    It’s all a matter of opinion. I like mine slightly more done but I sure wouldn’t turn that meat down either
