Ricotta donuts inspired by Italian Castagnole Ricotta (250g) Baking powder (6g) Egg (1 medium, 55–60g) Sugar (60g) Citrus zest – orange or lime (to taste) All-purpose flour (150g) Start by combining the egg (1 medium, 55–60g) with ricotta (250g) in a bowl. Add the sugar (60g) and zest of orange or lime (to taste). Mix well with a spatula until smooth and creamy. Now add the flour (150g) and baking powder (6g). Gently fold to form a soft dough. Dust your work surface and hands lightly with flour. Scoop out small portions of dough using a spoon or ice cream scoop. Shape them into small balls, about 2–2.5 cm in diameter. This amount makes approximately 20–30 mini donuts. Heat a mix of coconut oil (refined) and neutral oil for deep-frying to 170–185°C. If you don’t have a thermometer, test with a small piece of dough — it should sizzle gently and float. Carefully drop the donuts into the oil. They will turn golden and naturally rotate as they fry. Fry for about 7–8 minutes, until deeply golden and fully cooked inside. Use a slotted spoon to remove the donuts. Place them on a paper towel to absorb excess oil. While still warm, roll the donuts in sugar. Eat them fresh and warm — that’s when they’re at their best. These donuts are light, full of flavor, and made with love.
