    I really don’t understand the value of Wagyu mince – I get that it probably came from Wagyu beef, but once it’s been minced, we can make pretty much any beef have the same qualities (just not the name)

    Empanadas stuffed with mince, potatoes, onions and provolone. Let fhe potatoes fry in the wagyu fat to get them a bit crispy before mixing everything together. Caramelize the onions, fry the tomato paste and lift the fond with red wine. Cook down everything and chill add the provolone and stuff into the dough. Fry the empanadas.

    This is some crazy work. I get that they must use the whole cow but makes me as mad as when people grind up ribeyes: waste of money

  5. That fat content is wild. Whatever you cook, it’ll be floating in beef oil, which I’d save for the future.
