Every now and then there is a dish that comes into my life that I can’t stop thinking about and this creamy garlic palmesan chicken was just one of them. Now I am not exaggerating when I tell you that I could not stop licking that plate clean. The sauce was creamy, rich, garlicky, and just everything I want in a sauce topped with some beautifully juicy pans chicken breast. And we have ourselves the perfect little dish. Now, I always have a jar of garlic coffee in my fridge, but as I always say, this can be replaced with raw garlic if you want to save on time. Once we have cooked our season and chicken breast, add butter to the pan and cook until sizzling. Add the garlic coffee and smash it up until you have somewhat of a chunky paste. Deep braze the pan with white wine to remove all of those delicious brown bits left over in the pan from the chicken, scraping them off with a wooden spoon. Add sour cream and a splash of water. Stir through and then grate in lots of Parmesan cheese. Keep stirring until you have a smooth consistency. Sprinkle over some fresh parsley. And then add the chicken breast and all of their juices back to the pan. Enjoy.

  2. Garlic Potato Curry (Lahsun ki Sabzi)

    Ingredients:

    Potatoes (boiled)

    Garlic (preferably large, chunky cloves)

    Cooking oil

    Ginger-garlic paste

    Garam masala

    Sabzi masala

Chicken masala (optional, for a stronger flavor)

    Turmeric powder

    Salt

    Instructions:

    Take some chunky garlic cloves.
Clean them thoroughly, especially around the root area.
    Peel them carefully and completely.

Soak these garlic cloves in oil for at least one hour.

    After soaking, start cooking:

Add the soaked garlic to a pan.

Add ginger-garlic paste, garam masala, sabzi masala, chicken masala, salt, and turmeric.

    Stir-fry everything well.

Once the spices are well-cooked, add the boiled potatoes.

Cover with a lid and let it cook for about 5 minutes, checking and stirring in between.

Once it's fully cooked and the flavors have blended, serve hot.

This is called "Lahsun ki Sabzi" — a rustic, flavorful garlic curry.
Great with hot chapatis or rice.

  3. Presentation wise you shouldn't pour the sauce over that beautifully seared chicken. Keeps it crispier too. Serve it underneath or pour over a small portion of it and let it pool underneath.

Especially for this particular sauce… With the color and consistency… It's ☠️
