The term “Tarator” originates from the Balkans and was introduced to Anatolia via Ottoman cuisine. Traditionally, it refers to a yogurt, garlic, and walnut sauce or side dish. In countries like Bulgaria and Albania, “Tarator” refers to a cold yogurt soup.
Carrot Tarator is a Turkish variation with vegetables and is often served as a side dish.
🧾 Ingredients
3 medium carrots
4 garlic cloves
1/2 cup walnuts
4 tbsp vegetable oil (optional – I used olive oil)
1 to 2 cups plain yogurt
1 tsp dried mint
Salt
👩🍳 Preparation – Carrot Tarator
1. Coarsely grate the carrots and chop the walnuts.
2. Peel and roughly chop the garlic; sauté in 2 tbsp olive oil over medium heat until fragrant, without browning.
3. Add the grated carrots, season with salt, and cook until soft. Remove from the pan and set aside.
4. In the same pan, toast the chopped walnuts with 2 more tbsp olive oil until golden brown.
5. Add the walnuts to the carrots, stir well, and let cool.
6. Once cooled, fold in the yogurt.
7. Transfer to a serving bowl, sprinkle with dried mint, and drizzle with olive oil.
